Monte Cristo Sandwich

  Ingredients:

2 slices bread
2 eggs
4 fl. oz milk
1/2 teaspoon salt
a pinch of pepper
sliced breast of chicken or turkey
4 slices ham
4 slices Gruyere cheese
prepared mustard
butter for frying.

   
  Making:
     
  1. Cut the crusts from the bread.
  2. Beat the eggs, milk, salt and pepper together. Dip the slices of bread in the mixture and allow them to soak well, then drain.
  3. Arrange some thin slices of chicken on 4 of the slices of bread. Cover with a slice of ham and top with a slice of cheese. Spread lightly with mustard and cover each with another slice of bread. Press down well and cut across diagonally.
  4. Heat the butter in a frying pan and fry the sandwiches until brown and crisp, turning once. Serve while hot.
