Ingredients:
Slices bread
butter
mayonnaise (See at the end of this
recipe)
lettuce
slices of chicken breast
prepared mustard
2 rashers bacon, fried until crisp
1-2 slices tomato or onion
gherkins or stuffed olives for garnish |

Making: |

Remove the crusts from
the bread, toast and spread with butter. |
| |
2. |
Spread the first slice
with a little mayonnaise, cover with 1-2
leaves of lettuce and slices of chicken.
Spread a little more mayonnaise on the
chicken and cover with the second slice
of toast. |

Spread a very little
mustard on the toast and then a little
mayonnaise. Cover with the slices of
bacon and slices of tomato or onion. |

Place the third slice of
toast on top and press download firmly.
Serve at once, garnished with slices of
gherkin or stuffed olive. |

Mayonnaise: |

Ingredients: |

2 egg yolks
1/2 teaspoon salt
1/4 teaspoon dry mustard
1½ teaspoons wine vinegar
8 fl. oz olive oil
1/2 teaspoon lemon juice

Making of Mayonnaise: |
|

Rinse a bowl with hot
water and dry well. |

2. |
Put in the egg yolks,
salt and mustard and 1 teaspoon of
vinegar. Beat vigorously or at low speed
with an electric mixture. |

Add half the oil, drop by
drop, and then the remaining vinegar. |

4. |
Beat in the rest of the
oil in a steady stream. |

5. |
Add lemon juice. |
|

Note:
If the
mayonnaise curdles, break an egg yolk
into a clean basin and gradually beat
curdled mixture into it. |
