Ingredients:
1/4 lb ham, diced
1/2 lb cottage cheese
a pinch of cayenne pepper
1/4 tablespoon salt
1/2 cucumber
4 sticks celery, chopped
2 red desserts apples, cored and chopped
but not peeled
2 carrots, grated
2 tablespoons lemon juice
lettuce
2 hard-boiled eggs
parsley or watercress
FOR DRESSING:
4 fl. oz yoghurt
1 teaspoon lemon juice
a pinch of garlic salt
1 teaspoon prepared mustard
black pepper, paprika pepper
combine all ingredients |

Making: |

Combine the ham, cottage
cheese, pepper and salt. |

Arrange some thin slices
of cucumber around the edges of a large
platter and cut the rest into 1/4 inch
dice. |

Put the diced cucumber,
celery, apples and carrots into a bowl,
add the lemon juice and mix well.
Arrange on the platter, put some lettuce
leaves in the centre and place the ham
and cheese mixture on the top. |

Cut the eggs in halves
length-ways and arrange on top. Place a
sprig of parsley or watercress in the
centre. |

Serve with the dressing. |
