Rainbow Salad

  Ingredients:

1/4 lb ham, diced
1/2 lb cottage cheese
a pinch of cayenne pepper
1/4 tablespoon salt
1/2 cucumber
4 sticks celery, chopped
2 red desserts apples, cored and chopped but not peeled
2 carrots, grated
2 tablespoons lemon juice
lettuce
2 hard-boiled eggs
parsley or watercress

FOR DRESSING:
4 fl. oz yoghurt
1 teaspoon lemon juice
a pinch of garlic salt
1 teaspoon prepared mustard
black pepper, paprika pepper
combine all ingredients

   
  Making:
     
  1. Combine the ham, cottage cheese, pepper and salt.
  2. Arrange some thin slices of cucumber around the edges of a large platter and cut the rest into 1/4 inch dice.
  3. Put the diced cucumber, celery, apples and carrots into a bowl, add the lemon juice and mix well. Arrange on the platter, put some lettuce leaves in the centre and place the ham and cheese mixture on the top.
  4. Cut the eggs in halves length-ways and arrange on top. Place a sprig of parsley or watercress in the centre.
  5. Serve with the dressing.
