Ingredients:
1/4 lb ham, diced |

| Making: | ||
| 1. | Combine the ham, cottage cheese, pepper and salt. | |
| 2. | Arrange some thin slices of cucumber around the edges of a large platter and cut the rest into 1/4 inch dice. | |
| 3. | Put the diced cucumber, celery, apples and carrots into a bowl, add the lemon juice and mix well. Arrange on the platter, put some lettuce leaves in the centre and place the ham and cheese mixture on the top. | |
| 4. | Cut the eggs in halves length-ways and arrange on top. Place a sprig of parsley or watercress in the centre. | |
| 5. | Serve with the dressing. | |
