Ham Rolls

  Ingredients:

3 oz rice
chicken stock or water
1 bay leaf
1 tablespoon oil
1 oz butter
1/2 small onion, peeled and finely chopped
1 small apple, peeled, cored and chopped
1½ teaspoons curry powder
4 tablespoons single cream
grated rind of 1 lemon
2 tablespoon lemon juice
2 tablespoons chopped ham
2 tablespoon chopped red pepper
8 slices ham
lettuce
black olives and canned pimento for garnish

   
  Making:
     
  1. Cook the rice in boiling stock or salted water with the bay leaf. Drain, and while still hot stir in the oil, making sure the rice is well coated.
  2. Heat the butter in a frying pan, add onion and apple and cook for 5 minutes. Stir in curry powder, cook for a few minutes. Remove from the heat, add cream, grated lemon rind and juice, chopped ham, red pepper, and rice. Set aside for about 1 hour chill
  3. Roll this mixture in slices of ham and secure with a cocktail stick or toothpick if necessary.
  4. Arrange on a bed of lettuce and garnish with black olives and strips of pimento.
