Ingredients:
4-6 oz game
1 oz butter
1 onion
4-6 oz mashed potato
1 tablespoon herbs chopped
2 tablespoons chutney
1 egg
1½-2 oz flour
1-2 beaten eggs with 1 teaspoon oil
4-6 oz dry white breadcrumbs
fat for deep frying
tomato sauce |

Making: |

Chop 4-6 oz cold game.
Heat butter and cook chopped onion until
tender. Add to game with enough mashed
potato to make a firm mixture. Add
herbs, chutney, beaten egg and
seasoning. |

Mould into cutlet shapes,
and when firm, roll in seasoned flour.
Then brush with eggs beaten with oil and
cover completely with dry white
breadcrumbs. |

Heat fat and fry cutlets
for a few minutes, until golden brown,
drain and serve with tomato sauce. |
