| 1. | Chop 4-6 oz cold game. Heat butter and cook chopped onion until tender. Add to game with enough mashed potato to make a firm mixture. Add herbs, chutney, beaten egg and seasoning. | |
| 2. | Mould into cutlet shapes, and when firm, roll in seasoned flour. Then brush with eggs beaten with oil and cover completely with dry white breadcrumbs. | |
| 3. | Heat fat and fry cutlets for a few minutes, until golden brown, drain and serve with tomato sauce. | |
