  Ingredients:

8 slices rare cold roast beef
1 small cucumber
8 ripe tomatoes
2 green peppers
2 small chopped onions or 24 spring onions
3 lettuce hearts
3 stalks white celery
3 hard-boiled eggs (optional)
16 anchovy fillets
12 green olives
12 black olives

FOR DRESSING:
5 tablespoons best wine vinegar or lemon juice
15 tablespoons best olive oil
1 large teaspoon French mustard
1/4 teaspoon sugar
2 cloves crushed garlic

   
  Making:
     
  1. Prepare the ingredients for the salad; cut the slices of beef into thin strips; slice the cucumber, salt and allow to stand for 10 minutes, then wash and drain in cold water; quarter and seed the tomatoes; seed and slice the peppers; wash and chop onions or top spring onions; break up and wash the lettuce and discard outer leaves; hard-boil eggs. Sock the anchovies in milk for 10 minutes to remove salt and drain. Pit the olives.
  2. Arrange lettuce leaves round a large salad bowl or dish. Put the ingredients into the bowl in layers reserving the anchovies and olives for the top. Arrange the top layer carefully with an eye to colour. Now make a lattice design over the whole top with the anchovies putting an olive in the centre of each lattice alternating the colours.
  3. Mix all the ingredients for the dressing together and spoon over the whole salad. Serve cold with garlic bread or French bread and butter.
