Fish Fritters

  Ingredients:

1 pound small fish
3 eggs, separated
3 tablespoons flour
1/2 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon minced garlic
1 tablespoon minced parsley

   
  Making:
   
  Cook fish, remove skin and bones and mash. Beat egg yolks until light and thick, then add flour, salt, pepper, garlic, parsley and fish. Fold in whites of eggs beaten until stiff. Drop by tablespoons into hot deep fat (360°F to 370°F) and fry until brown. Serve with tomato catch-up, Tartare Sauce or Egg Sauce.
