Vitamins are organic substances widely distributed in natural foodstuffs. They are believed to be necessary to certain vital functions of the human body. So far, nearly 20 vitamins have been discovered of which of the following are considered the most important in family meal planning.
VITAMIN A
Important to: children for growth; all ages for normal vision and healthy eyes; help protect body against infections; help to keep mucous membranes of the body healthy.
Good Food Sources Include: liver, egg yolks, carrots, greens, sweet potatoes, beet greens, winter squash, cantaloupe, broccoli, dried apricots, butter, whole milk and cream, cheese made from whole milk.
B-VITAMIN FAMILY
Important to: stimulate normal appetite; aid good digestion; promote healthy skin; encourage good morale; steady nerves.
Good Food Sources Include: breads and flour made from whole or enriched grain, liver, pork, ham, whole milk, yeast, rolled oats.
VITAMIN C
Important to: help build healthy body tissues, healthy bones, and blood; help build resistance to infection; help heal wound and fractures.
Good Food Sources Include: citrus fruits, tomatoes, fresh strawberries, cantaloupe, cabbage, broccoli, green pepper.
VITAMIN D
Important to: children because it helps some minerals build and maintain straight, strong bones and healthy teeth; pregnant women and nursing mothers for both their own body needs and that of their babies.
Good Food Sources Include: egg yolks, butter, sardines, tuna, salmon, liver.
