thousands of commercial varieties of tea, the
differences depending upon the geographic
location, the soil, the age of the leaf and the
handling. However there are only three chief
basic type of tea; green, black and oolong. |

heat-treating leaves soon after picking. |

BLACK TEA is made by
allowing the leaves to ferment before

OOLONG TEA is made
from partially fermented leaves. |

PEKOE OR ORANGE PEKOE
refers only to a leaf size. |

INDIA TEAS are named
after the districts in which they are grown. |
