Some Approximate Substitutions

 
 
 
Baking Powder:
In place of 1 teaspoon baking powder use 1/4 teaspoon baking soda plus 1 teaspoon cream of tartar.
Chocolate:
In place of 1 square (1 ounce) unsweetened baking chocolate use 3 tablespoons cocoa plus 1 tablespoon fat.
Flour for Thickening:
In place of 1 tablespoon flour, use 1/2 tablespoon of any one of the following, cornstarch, potato starch, arrowroot starch, rice starch, or use 2 tablespoons of quick-cooking tapioca.
Flour for Baking:
In place of 1 cup cake flour use 7/8 cup all-purpose flour.
Garlic
In place of 1 clove of garlic use 1/4 teaspoon garlic powder.
Onion
In place of 1 medium onion use 1 teaspoon onion powder.
