A blend of hard or soft wheat
flours, which is lower in protein then bread
flour but higher than cake flour. It can be used
with good results for all type of home-caked
products.
Allspice
The dried berry of pimento tree
of the West Indies. Used as a condiment. The
cane is due to the flavor which resembles a
combination of cloves, cinnamon and nutmeg.
Anise
The fruit of a small annual plant
which dries into the form of a seed. The best is
grown in Spain. Mexico and India. Used on
breads, cakes and cookies
Appetizer
A small serving of food or
beverage served before or as the first course of
a meal.
Aspic
A transparent jelly, usually made
of meat stock, which has been boiled down
sufficiently to become firm when cold. Also
applies to meat, fish or vegetable stock
thickened with gelatin.
