To make coffee for a large
number of servings, use
1 pound of coffee and
2 gallons of water
for every 40 cups of coffee.
THE OLD-FASHIONED COOKING
POT METHOD calls for a clean cloth bag,
large enough so that coffee grounds fill it
no more than hand-full. Wet sack, add
coffee, tie sack tightly at top and leave
cord long enough to tie on handle. Measure
water into pot; bring to rolling boil;
reduce heat to hold water just under boil.
Fasten sack of coffee to handle and submerge
sack in water. Brew coffee 8 to 10 minutes,
pushing sack gently up and down frequently
to obtain good extraction. When brew is
ready, remove sack, allowing all liquid to
drain into brew. |
