Citrus Fruits
GRAPEFRUIT
Because grapefruit is mostly liquid, weight for size is a good buying guide. Lift two grapefruit of approximately the same size, one in each hand. The grapefruit which feels heavy in the hand will probably be a good one. If grapefruit feels light in weight and looks coarse and rough, generally it will be pithy, dry and tasteless. Weight for size, a well-rounded shape and a smooth fine texture of skin are better appearance guides to good grapefruit than is color. The general reasons for grapefruit are:
January to April - From Southern California
Summer months - From Arizona California
October to June - Florida and Texas
The pink-meated grapefruit is a relative newcomer and has been developed by crossbreeding. Two varieties known as the Marsh Pink and Ruby Red contain only a few seeds while the Foster Pink and the Thompson Pink grapefruit have more seeds.
LEMONS
Lemons are often referred to as cook's best fruit-friend. No other fruit is a versatile because of its many, varied uses, or as complementary to other foods. A good lemon is well colored, has a fine textured skin and is heavy for its size. Generally, lemons come from California and from Arizona.
LIMES & KUMQUATS
A good lime is green in color, and heavy for its size. Kumquats are eaten whole either fresh or preserved. Good kumquats are a deep, orange color and heavy for their size.
ORANGES
Although Florida and California are greatest orange products states, many good oranges are also gown in Arizona and some in Texas. As with grapefruit and other citrus fruits, their firmness is probably the best indication of quality. Light-weight oranges are dry and tasteless, while oranges that are firm and solid are usually juice and delicious.
Navel Oranges are popular for their fine flavor; their skin is medium thick, making them easy to peel; usually no seeds; on the market from December to May.
Valencia Oranges are excellent for juice because they are thin-skinned and have such a good flavor. They come from Florida beginning late in February and from California from May to November. Valencia oranges usually have a few seeds.
Temple Oranges are grown in California, Florida and Arizona; best in January to March. Temples are very easy to peel, have a deep, rich color and an especially sweet full flavor.
Tangerines are grown in Florida; shapes small, flat, to large, round; skin is easily removed and the tiny fruit segments separate quickly. Best quality tangerines are those that are firm in texture. They are generally in season from November to May.
