  Ingredients:

2 tablespoons oil
1 green pepper, seeded and chopped
4˝ oz finely chopped onion
1 tablespoon flour
4 fl. oz milk
12 oz grated Cheddar cheese
1 small can (8 oz) tomatoes, drained
1 canned pimento, cut into strips
3 tablespoons chopped black olives,
cayenne pepper
3 egg yolks
toast or boiled rice

   
  Making:
     
  1. Heat the oil in a pan, add the green pepper and onion and sauté for about 10 minutes.
  2. Stir in the flour and milk and stir until boiling.
  3. Add cheese and tomatoes and cook over low heat for about 10 minutes.
  4. Add the beaten egg yolks gradually and stir with a fork until the mixture thickens. It should not boil at this stage.
  5. Serve on toast or with boiled rice.
