  Ingredients:

2 slices bread
butter
2 eggs
nutmeg
grated cheese

   
  Making:
     
  1. Toast the bread on one side, turn and toast the under side very lightly. Butter the lightly toasted side and keep hot.
  2. Separate the eggs, add seasoning and a pinch of nutmeg to egg whites, and beat until stiff.
  3. Spread the egg white over the buttered toast, make a slight indentation in the middle and drop in the egg yolk.
  4. Sprinkle with grated cheese and put under a hot grill for a few minutes until the egg yolks has set.
