and Cheese Recipes - Bacon Omelette |

Ingredients:
1˝
oz butter
4 spring onions, sliced
4 eggs
2 tablespoons double cream, whipped
1/2 tablespoon salt
1/4 teaspoon pepper
1 teaspoon prepared mustard
6 rashers crispy fried bacon |

Making: |

Melt half the butter in
an omelette pan and sauté the onion for
3 minutes. Then remove from the pan. |

Beat the eggs, cream,
salt, pepper and mustard until the
mixture is just blended. Add the onion
and bacon. |

Heat the remaining butter
in the pan, pour in the egg mixture and
cook over low heat, stirring lightly
with a fork and lifting the eggs to
allow the uncooked mixture to run
underneath. |

When the eggs are just
set, fold over and turn out on to a hot
dish. |
