Bacon Omelette

  Ingredients:

1˝ oz butter
4 spring onions, sliced
4 eggs
2 tablespoons double cream, whipped
1/2 tablespoon salt
1/4 teaspoon pepper
1 teaspoon prepared mustard
6 rashers crispy fried bacon

   
  Making:
     
  1. Melt half the butter in an omelette pan and sauté the onion for 3 minutes. Then remove from the pan.
  2. Beat the eggs, cream, salt, pepper and mustard until the mixture is just blended. Add the onion and bacon.
  3. Heat the remaining butter in the pan, pour in the egg mixture and cook over low heat, stirring lightly with a fork and lifting the eggs to allow the uncooked mixture to run underneath.
  4. When the eggs are just set, fold over and turn out on to a hot dish.
