| 1. | Melt half the butter in an omelette pan and sauté the onion for 3 minutes. Then remove from the pan. | |
| 2. | Beat the eggs, cream, salt, pepper and mustard until the mixture is just blended. Add the onion and bacon. | |
| 3. | Heat the remaining butter in the pan, pour in the egg mixture and cook over low heat, stirring lightly with a fork and lifting the eggs to allow the uncooked mixture to run underneath. | |
| 4. | When the eggs are just set, fold over and turn out on to a hot dish. | |
