Prawn Toast

  Preparation time: 35 minutes

  Ingredients:

1 spring onion (white part only)
50g water chestnut pr bamboo shoots
200g green prawn meat (about 450g green prawns)
1 egg
2-3 tablespoon cold water
9 slices white bread
3/4 cup white sesame seeds
vegetable oil for deep frying.

   
  Making:
     
  1. In a food processor chop the spring onion and water chestnut or bamboo shoots. Add the prawn meat, egg and water. Grind to a smooth, light paste.
  2. Spread prawn mixture evenly over each bread slice. Remove crusts and cut each slice into four triangles.
  3. Dip into sesame seeds to coat evenly.
  4. Deep-fry in moderately hot oil, filling side downwards until light golden. Turn and fry the bread side briefly, then remove and drain.
  5. Serve hot with a sweet and sour or plum sauce.
