Fried Dim Sims

Add finely chopped bamboo shoots, spring onion and coriander to pork mince. Knead pork mixture to a smooth paste using hands. Place a tablespoonful of filling in the centre of won ton wrapper.
Press edges of wrapper up and around filling to enclose them.

  Preparation time: 25 minutes

Makes 20-24
   
  Ingredients:

1 pack won ton wrappers
600g finely minced pork
100g bamboo shoots, finely chopped
1 spring onion, finely chopped
2 tablespoons finely chopped fresh coriander
2 tablespoons light soy sauce
vegetable oil for deep frying

   
  Making:
     
  1. Cover Wrappers with a cloth until needed.
  2. In a food processor grind pork until smooth. Transfer to a bowl. Add bamboo shoots. onion, coriander and sauce; work to smooth paste using hands.
  3. To form the dumplings place a rounded tablespoon of the filling in the centre of the wrapper and press the edges of the wrapper up around the filling to almost enclose it. Squeeze gently so the wrapper adheres to the filling with the top of the filling partially exposed and the edges of the wrapper almost meeting on the top. Tap the base of each Dim Sim on the table to flatten.
  4. Heat deep oil to moderately hot and fry the Dim Sims, several at a time, until the pastry is golden brown, about 2 minutes. Remove and drain on absorbent paper.
  5. Server the Dom Sims hot with small dishes of soy sauce for dipping.
   
  HINTS:

1. If preferred, instead of frying, steam the dumplings for about 6 minutes.
2. This recipe also makes about 48 won tons. Use less filling and moisten the edges of the wrapper, fold into a triangle, pinch the edges together, then bring the two outer points together. Deep-fry or steam as above, allowing less cooking time than for Dim Sims.
