Ingredients:
1 gammon rasher (about
1-1¼ lb) cut 1 inch
think
prepared mustard
4 oz dried apricots, soaked overnight
3 tablespoons seedless raisins
3-4 tablespoons stock or water
6 medium potatoes, peeled and sliced.
Pre-heat oven to 375°F

Making: |

Heat a sauté
pan, put in the ham and brown lightly on
both sides. |

Put into a deep baking
dish, spread very lightly with mustard
and sprinkle with pepper. |

Arrange apricots and
raisins on tops. |
| |

Add stock or water and
cover with slices of potato. Sprinkle
very sparingly with salt and dot with
butter. Cover with waxed paper and bake
for 3/4 hour. Remove the paper and bake
for 15-20 minutes more. |
