Ingredients:
1 gammon rasher (about 1-1¼
lb) cut 1 inch think |

| Making: | ||
| 1. | Heat a sauté pan, put in the ham and brown lightly on both sides. | |
| 2. | Put into a deep baking dish, spread very lightly with mustard and sprinkle with pepper. | |
| 3. | Arrange apricots and raisins on tops. | |
| 4. | Add stock or water and cover with slices of potato. Sprinkle very sparingly with salt and dot with butter. Cover with waxed paper and bake for 3/4 hour. Remove the paper and bake for 15-20 minutes more. | |
