Ham and Apricot Pie

  Ingredients:

1 gammon rasher (about 1-1¼ lb) cut 1 inch think
prepared mustard
4 oz dried apricots, soaked overnight
3 tablespoons seedless raisins
3-4 tablespoons stock or water
6 medium potatoes, peeled and sliced.

Pre-heat oven to 375°F Mark 4

   
  Making:
     
  1. Heat a sauté pan, put in the ham and brown lightly on both sides.
  2. Put into a deep baking dish, spread very lightly with mustard and sprinkle with pepper.
  3. Arrange apricots and raisins on tops.
  4. Add stock or water and cover with slices of potato. Sprinkle very sparingly with salt and dot with butter. Cover with waxed paper and bake for 3/4 hour. Remove the paper and bake for 15-20 minutes more.
