Fondant Dipped Almonds

  Ingredients:

2 cups sugar
2 tablespoons light corn syrup
1 cup water
vanilla extract
food coloring
roasted unbalanced almonds

   
  Making:
   
  Prepare fondant, follow directions for basic fondant. Allow fondant to ripen for several days. When ready to use, melt a small amount of fondant at a time over hot water. Paddle in extract and coloring as desired while heating to 135°F. Using a dipping fork, dip whole almonds to cover completely, or hold nuts by pointed end and dip rounded end only. Place on waxed paper. If fondant becomes too hard for dipping, gently blend in a few drops of hot water.
