Ingredients:
180 grams butter
1.1/4 (one and one by fourth) cups brown
sugar
1 teaspoon imitation vanilla essence
1 egg
3 cups plain flour
1.1/2 (one and a half) teaspoons baking
powder
1 tablespoon coca
Dash peppermint essence |

Beat butter and sugar in
a bowl with an electric mixer until
light and fluffy. Beat in vanilla and
egg. Soft flour and baking powder; mix
well. |

Divide mixture in half.
Add coca to one half and peppermint
essence to the other. Roll out each half
of dough to form a rectangle 2mm thick.
Place the chocolate layer on a large
sheet of greaseproof paper. |

Place the peppermint
layer on top of the chocolate layer.
Roll up like a Swiss roll. Wrap in
plastic film and refrigerate until firm. |

Unwrap and slice thinly
using a sharp knife. Place on greased
baking trays. bake at 180°C
for 10-15 minutes or until golden. Cool
on trays for 2-3 minutes. |
